This Parisian is a great traveler chef of 43 years old, he became expert in spices and exotic flavors in the distant islands of: Polynesia, Madagascar, Antilles and St Martin.

With his rather traditional roots, he sometimes adds a bit of Asia, Africa or the Caribbean. According to his instinct or mood.

The seasonal cooking is both delicate and elegant. The chef uses a lot of fragrant oils, aromatic herbs, spices, and loves to sprinkle his dishes of bulgur and quinoa.
