High Mexican cuisine (Alta cocina mexicana) is constantly evolving, beginning with its pre-Colombian roots, then combined with elements brought to the New World during the Colonial period, up to today’s most recent Mediterranean, Continental, Caribbean and Asian influences. We mainly use homegrown and local organically grown crops from our orchard-farm.

Born in the Oaxacan Mixteca, the traditional cook has cultivated the love for the family kitchen of our grandmothers since she was a child. Her discipline and constant work
converge to fulfill the firm objective of preserving the authentic recipes of Oaxaca.
In Tierra del Sol, the cook prepares exquisite traditional oaxacan dishes, with emphasis on those coming from the Mixteca region, such as chileajo, mole de caderas, tetelas, stews with huajes, and picaditas, among many more.
