Francisco Ruano started his education in Guadalajara, in 2004 he worked with Thierry Blouet at Cafe des Artistes. A year later they joined a cooking team in a cruise ship, where they learned the hard work of a kitchen.
He traveled to Pais Vasco and joined the school of Luis Irizar, he worked at Mugaritz, El Celler de Can Roca and Noma. In 2013 he opened Restaurante Alcalde, in Guadalajara, which is ranked # 31 en Latams 50 Best and 109 in World’s 50 best extension to 120 best restaurants.
Mauricio Leal y Josué Jiménez
Josué Jiménez, graduated from the University of Nevada. With additional studies in Switzerland and Spain. Josué was trained at Chef Thomas Keller`s Restaurant Bouchon in Las Vegas. When he came back to Puerto Vallarta, he created Personal Chef Catering. In December of 2017, together with Mauricio Leal, they opened Restaurante Icú.
Mauricio Leal, graduated from school Gregoire Ferrandi in Paris, has previously worked in Café des Artistes, La Closerie de Lilas in Paris and Four Seasons Punta Mita.
